For years scientist studies have proved a link between grilled meats; especially processed ones that contain nitrates and nitrites, and certain forms of cancer, but it now seems we might be adding premature aging and Alzheimer’s to the list.
The suspect is a compound called advanced glycation end products (AGEs) that form as a result of high protein foods being exposed to high temperatures coming from grilling. The resultant compounds suppress an anti-ageing enzyme in our bodies called Sirt1.
Adding to the problem is sugar and fat; think barbecue and similar sauces, which gives barbecued and fried foods even higher AGEs compound levels.
The study, itself a mouthful: Oral glycotoxins are a modifiable cause of dementia and the metabolic syndrome in mice and humans, was published in the Proceedings of the National Academy of Sciences.
The bottom line is ditch the grilled and fried meats. You may live longer, live smarter and spare the lives of a few animals in the bargain.
